Fresh Mexican Tomato Salsa


– 3 medium tomatoes, finely chopped
– 1 Anaheim chile, seeded and chopped
– 1/4 cup each chopped bell pepper, sliced scallions, and snipped fresh cilantro
– 2 tbs lime juice
– 2 jalapenos, seeded and finely chopped
– 1 clove garlic, minced
– 1/8 tsp each salt and pepper


Combine all ingredients and chill overnight before serving.
