Chunky Mexican Guacamole


– 2 roma tomatoes, finely chopped
– 1/4 cup sliced scallions
– 2 tbs lime juice
– 1 tbs olive oil
– 1 clove garlic, minced
– 1/4 tsp each salt and pepper
– 2 very ripe avocados, coarsely mashed


– Combine tomato, and next 6 ingredients.
– Gently stir in avocados and serve immediately.
– Alternatively, you may cover the surface and chill up to 1 hour before serving.
